We’re back with more easy, no-fuss midweek recipes. This is our one pan stir fried pork mince with egg tofu 🥘 Egg tofu is a soft and creamy tofu, it’s sometimes called silken tofu but you can use regular tofu too. As always, we got ours from @asiamarket.ie We also used minced pork in this recipe, but feel free to use ground turkey/chicken, or other ground meat of your choice. 🙌🏼

Ingredients
2 egg tofu / silken tofu - cut into 1 inch pieces
250g pork mince
100g green beans - chopped into thirds
2 stalks green onions - finely chopped (garnish)
Enoki mushrooms (optional)
3-4 cloves of garlic - grated or finely minced
1/2 onion - diced
1 tsp ginger - grated or finely minced
Sauce
2 tbsp soy sauce
1.5 tbsp oyster sauce
1 teaspoon sugar
1/2 teaspoon white pepper
Method
In a bowl, combine sauce ingredients and mix until combined. Cover and set aside
Heat your wok/ pan to med-high heat & add oil
Fry tofu, 3 mins on each side or until slightly golden brown. Remove from pan and set aside
Sauté garlic, ginger and onion until fragrant
Add pork mince and stir-fry for 3-4 minutes or until fully cooked
Add green beans, mushrooms and sauce and stir to combine. Cover with lid for 3 minutes to cook your veggies
Add fried egg tofu back in pan and top with green onions for garnish
Serve with a bowl of rice and enjoy 🍚🥢
