One-Pot Japanese Curry 🍛


The perfect comfort meal if you’re looking for a quick and easy recipe to whip up for dinner! We love to make a big batch and have it ready for the weeks lunch! We made our curry with Golden Curry’s cubes & you honestly cannot go wrong with this box 🤤

Ingredients
  • 500g Chicken thighs (or any preferred meat!) - cut into bite size pieces

  • 4 cubes S&B Golden Curry Sauce

  • 500ml water / chicken stock

  • 2 medium onions - thinly sliced

  • 1 tbsp ginger - grated / finely minced

  • 3-4 cloves garlic - finely minced

  • 2 medium carrots - large diced / cut into chunks

  • 1 large potato - large diced / cut into chunks

  • 2 tbsp butter

  • 1/2 cup peas - optional

  • 100ml coconut milk - optional

  • Salt and Pepper to taste

Toppings (optional)

  • Soft boiled eggs

  • Furkujinzuke / Pickled daikon

  • Green onions - finely chopped

Method
  1. In a large pan in med-high heat, melt butter and onions, garlic and ginger. Sauté until fragrant.

  2. Add chicken and stir-fry until golden brown in colour.

  3. Add potatoes, carrots and water/ chicken stock and bring to boil.

  4. Add curry cubes and stir to dissolve. Reduce to med-low heat and simmer until the sauce thickens.

  5. *Optional: Add peas and coconut milk to enhance the richness of the sauce.

  6. Add salt and pepper to taste.

  7. Serve with a bowl of rice with a soft-boiled egg and pickled daikon and enjoy! 🍚
