In my humble opinion, burnt basque cheesecakes sits comfortably at the top of the cheesecake pyramid. It's mind blowingly DELICIOUS.
It also comes together so fast with only a handful of ingredients and they make the perfect little gift!

Ingredients
320g cream cheese
2 medium eggs
100g sugar
210ml heavy cream
15g cornstarch
Method
Place rack in the middle of the oven and preheat to 200C.
Grab a large bowl, and cream the cream cheese and sugar until combined.
Whisk the 2 eggs in but don't over mix!
In a separate bowl, dissolve the cornstarch in the heavy cream.
Slowly combine this to the cream cheese mixture.
✨Optional ingredients but it takes it to another level: add vanilla extract and pinch of sea salt! ✨
Pour mixture in a lined 6-inch pan and bake at 200C for 20-24mins.
When ready to take out, the top should be burnt/caramelised with a small rise and it should have the famous jiggle.
Let it cool down in room temp for 30 mins then place in the fridge overnight to set.
