5-Ingredient Burnt Basque Cheesecake

In my humble opinion, burnt basque cheesecakes sits comfortably at the top of the cheesecake pyramid. It's mind blowingly DELICIOUS.

It also comes together so fast with only a handful of ingredients and they make the perfect little gift!

👤 6-inch cake (6-8 people)

  • 320g cream cheese

  • 2 medium eggs

  • 100g sugar

  • 210ml heavy cream

  • 15g cornstarch

  1. Place rack in the middle of the oven and preheat to 200C.

  2. Grab a large bowl, and cream the cream cheese and sugar until combined.

  3. Whisk the 2 eggs in but don't over mix!

  4. In a separate bowl, dissolve the cornstarch in the heavy cream.

  5. Slowly combine this to the cream cheese mixture.

  6. ✨Optional ingredients but it takes it to another level: add vanilla extract and pinch of sea salt! ✨

  7. Pour mixture in a lined 6-inch pan and bake at 200C for 20-24mins.

  8. When ready to take out, the top should be burnt/caramelised with a small rise and it should have the famous jiggle.

  9. Let it cool down in room temp for 30 mins then place in the fridge overnight to set.
