Lemon & Poppy seed loaf cake 🍋

I’m always here for min effort, max reward bakes and this is definitely one of them. It’s both visually pleasing and mouth-wateringly goodddd, so I hope you give this one a go!

👤 1 large loaf cake

  • 200g plain flour, sifted

  • 1 tsp baking powder

  • ½ tsp bicarbonate of soda

  • ½ tsp salt

  • 150g butter (softened) temperature

  • 180g sugar

  • 3 eggs

  • 150ml milk

  • 2 tbsp poppy seeds

  • 2 tbsp lemon juice

  • Zest of 1 lemon

Lemon drizzle

  • 100g icing sugar

  • 1 tbsp lemon juice

  1. Place rack in the middle of the oven and preheat to 170C.

  2. In a large bowl, and cream butter and sugar until it becomes pale.

  3. Add eggs one at a time then whisk.

  4. Pour milk and poppyseed and mix.

  5. Add lemon juice and zest.

  6. Sift flour, baking powder, bicarb and fold it in the mixture.

  7. Pour mixture in a lined loaf tin and bake at for 40-45 mins or until toothpick comes out clean.

  8. To make lemon drizzle, add lemon juice to icing sugar and mix until all clumps are gone and it's fully smooth.

  9. Let the cake cool down for at least 30 mins then decorate and drizzle!
