Mango Sticky Rice๐Ÿฅญ๐Ÿ‡น๐Ÿ‡ญ | Khao Niaow Ma Muang


Iโ€™m a sucker for mango sticky rice as much as the next girl. Iโ€™m the type to jump straight to the dessert menu when visiting a Thai restaurant to see if they serve it but itโ€™s a low effort, high reward dessert to make at home! ๐Ÿ’›

Ingredients
  • 1/2 cup glutinous rice

  • 1 can coconut milk

  • 4 tbsp sugar

  • 1/4 tsp salt

  • 1 ripe, sweet mango

  • Toasted coconut chips or toasted sesame seeds (Optional garnish)


Method
  1. Wash rice and soak with water for at least 1 hour.

  2. Drain and steam rice on rice cooker.

  3. While rice is cooking, grab a small saucepan and add coconut milk, sugar and salt and stir to combine. Separate around 5 tbsp of this mixture into another bowl and set aside. Add cooked sticky rice into the saucepan and soak until combined.

  4. In another small saucepan, add the remaining sauce that you set aside and let this thicken.

  5. To serve, cut mango into long chunks and arrange it around the sweetened rice. Sprinkle with sesame seeds or toasted coconut chips and drizzle with the thick coconut sauce!
