Beef Ho Fun 🥢🥡



An intensely satisfying late lunch served in minutes! Chow beef ho fun is a Cantonese dish made from stir-frying beef, wide rice noodles, spring onions, bean sprouts and dark soy sauce!

Ingredients

Beef Marinade

  • 500g sirloin, thinly sliced.

  • 1 tsp baking soda

  • 1 tbsp cornstarch

  • 1 tbsp soy sauce

  • 1 tsp oyster sauce

  • 1/2 tbsp sugar

For the rest of the dish

  • 3 tbps oil

  • 600g of fresh ho-fun noodles

  • 5 stalks green onion, chopped into thirds

  • 1/2 thumb ginger, finely sliced

  • 4 tbsp dark soy sauce

  • 3 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 cup bean sprouts

  • 1 tsp sugar

  • Pepper to taste






Method
  1. In a bowl, add your thinly sliced beef along with baking soda, cornstarch, sugar and soy sauce. Leave to marinate for at least 30 mins.

  2. Combine soy sauce, oyster sauce, dark soy sauce and pepper into a bowl and mix.

  3. Separate your fresh noodles and ensure that there are no large clumps. ✨ PRO TIP ✨ If your noodles are stiff and stuck together, blanch them in boiling water to loosen them up and transfer to ice bath and strain to dry!

  4. In a high heat ‼️ (MUST BE VERY VERY HOT ‼️) wok add oil and marinated beef and cook until it develops a char on each side.

  5. When nearly cooked, remove and set aside.

  6. Add more oil into the pan, keeping it at high heat, stir fry your your noodles in the wok until nearly tender making sure that it is evenly spread out. (DO NOT OVERCOOK)

  7. Add your sauce into the wok and continue to stir-fry, making sure each noodle is evenly coated.

  8. Add green onions and cooked beef into the wok and stir fry for 2 mins.

  9. Turn off the heat and mix in your beansprouts. Serve and enjoy!
