Bruschetta with Mozzarella ๐Ÿ…๐ŸŒฑ


Another Italian classic making an appearance on our feed! ๐Ÿ‡ฎ๐Ÿ‡น


We had this as a light snack before our late lunch / dinner the other day and it was divine! ๐Ÿคค For something so easy and cheap to make, it packs on a load of flavour and yummy-ness ๐Ÿ˜‹


๐Ÿ•’ 10 minutes ๐Ÿ‘ค 3-4 people









Ingredients
  • 6 plum tomatoes, diced

  • 2 cloves garlic, finely minced

  • Handful of basil leaves, chopped into thin ribbons

  • 2 tbsp olive oil

  • Salt & pepper to taste

  • Splash of balsamic vinegar

  • Toasted sliced baguette

  • Optional: mozzarella

Method

1. Combine tomatoes, basil and garlic into a bowl

2. Salt and pepper to taste

3. Generous splash of olive oil

4. Rub a clove of garlic on to your sliced baguette and add a splash of olive oil and toast until golden and crispy

5. Add a tablespoon of the tomato mixture on your toasted baguette & enjoy!
