This salad is also great for using up the veggies in your fridge. 🙌🏼

1/2 head cabbage
Baby gem lettuce
2 medium carrots
2 chicken breast, butterflied
Salt & pepper
Mint — finely chopped
Coriander — finely chopped
Season chicken breast and grill in oven 190C for 15-20 mins
In a large bowl, combine dressing ingredients, add all veggies and toss.
To serve, place dressed salad in a plate and top with grilled chicken, garnish with fried shallots and more coriander!
