If you are a coconut lover, then this is the treat for you! This recipe is basically another simple way of making coconut macaroons. They are perfectly sweet, light and chewy.
These squares require only a few simple ingredients making them super easy to whip up anytime you’re craving a sweet treat. We love them plain but you can also add a drizzle of chocolate if you fancy. They are the perfect treat for your afternoon tea!

Ingredients
250g desiccated coconut - toasted
100g butter - room temperature
1 can condensed milk
2 large eggs
70g self-raising flour
Optional: a drizzle of melted chocolate as a topping
Method
Preheat oven at 180C
In a large bowl, cream butter and sugar with hand mixer until combined.
Add eggs one at a time and mix until combined.
Pour condensed milk and mix again.
Add all of your dry ingredients, flour and desiccated coconut and fold into mixture.
Pour your mixture into a non-stick square tin and bake for 20-23 mins or until golden brown.
Leave to cool and cut into even squares and enjoy with tea or coffee!
